Membership Spotlight: Waxin’s Restaurant

In August, we had the pleasure of meeting one of our Corporate members, Waxin’s, represented by its founder Patrik Waxin and his colleagues Annica Bereflod, and Viktor Nyman. They shared the inspiring journey of Waxin’s, which began as a small Swedish establishment and has grown into a thriving organization with soon-to-be three restaurants in South Florida.

Patrik relocated to Florida in 2012 but after five years began to miss the unique flavors of Swedish gastronomy. This craving combined with his extensive industry experience led to the opening of Waxin’s. Patrik’s vision was to create a second home not only for himself but also for his guests. The name of the restaurant came about during a family vacation in Mexico when Patrik’s children suggested naming it after their last name, Waxin. Initially hesitant, Patrik embraced the idea and with it, opted to go bigger and increase the restaurant’s budget, a decision he believes has been key to its success.

The first Waxin’s restaurant opened in June 2020, right at the height of the pandemic, possibly one of the most challenging times for any new business. However, Patrik attributes the restaurant’s success to this timing. With regulations limiting capacity to just 40 guests, Waxin’s was able to focus on quality and gradually scale the operations. While the financial challenges were significant, Patrik believes they ultimately benefited the product and positioned the restaurant for long-term growth.

With time, Waxin’s tripled its initial operating budget and today the team takes great pride in the product and people behind its creation. Success has led to expansion, with two new locations planned for West Palm Beach and Naples. What started as one restaurant has grown into an organization, with exciting plans to introduce innovative dining concepts rooted in Swedish culinary traditions. Viktor Nyman, who has over 30 years of experience in the industry, will manage operations under the “Swedish Restaurant Mafia” umbrella, driving future expansion.

We’re also thrilled to welcome two remarkable talents to help launch the new Waxin’s locations in Florida: Melvin Glimstål and Emil Persson. Melvin, the team leader of the Swedish Junior Culinary Team, recently celebrated a victory at the Culinary Olympics in Stuttgart. His innovative approach and passion for Swedish cuisine promise to bring fresh excitement to Waxin’s menus. Joining him is Emil Persson from the Swedish Senior Culinary Team. Emil’s extensive experience and expertise in blending traditional flavors with modern techniques have earned him a stellar reputation in the culinary world. Their combined talents will help create unforgettable dining experiences at the new restaurants in Naples and West Palm Beach. We look forward to seeing the magic they bring to Waxin’s.

Waxins upcoming events: 

Our Waxin’s Alton location is hosting its very first wine dinner series this Fall. This exciting event will be a collaboration between Zac Taylor and Krystal Kinney, our in-house sommeliers, who will curate perfect pairings of your favorite food and wines. Stay tuned for further details, coming late Fall!

We will also be hosting our Julbord at Waxin’s! Melvin and Emil will be preparing the Julbord, bringing their expertise to this traditional Swedish Christmas feast. Depending on demand, we are happy to extend the days for this special event.
